Yes, if the site allows them. Symbols expand the character set from 62 to 94 possible characters per position, which makes brute-force attacks significantly slower.

You don't — that's the point. Use a password manager. Bitwarden is free and open source. 1Password and Dashlane are good paid options. Your browser's built-in manager works too.

Some sites have odd restrictions (no symbols, max 12 characters). Adjust the settings to match what the site allows. A 12-character password with all character types is still much better than a memorable word.
